Hummingbird Chocolate Maker |
Drew and I have always savoured chocolate, but we came to making it in a roundabout way. From Afghanistan to Zimbabwe, we’ve spent our careers working with farmers in developing countries which was just about the best job in the world. We learned much, helped a bit, and gained a huge respect and affection for people who make food, from grower to artisan. Life was a tad spartan, but it was considerably livened up by occasional indulgences of chocolate. When it was time to leave Kabul, it just seemed natural that we’d pursue chocolate making as it lets us connect with farmers, while learning how to craft something we love. We started out casually; a private hobby really. Friends wanted our bars and we experimented more. From there, chocolate became a passion. Soon enough, some insanely talented people joined us, considerably raising our game in the process. Together we’ve become crazily obsessed with making the best possible chocolate we can. There’s so much to learn in chocolate; get the right beans – do the right thing – and the flavours unlocked are incredible. Rush it, and it can be a disaster! We love what we do and reckon it’s worth the time to do it right. |

Deux Cranes is an artisanal chocolate and confectionery company showcasing handcrafted creations made in California by French-trained Chocolatier Michiko Marron-Kibbey. She draws on her Japanese heritage and flavors of her youth for inspiration in creating the varied lineup of sweet, and sometimes salty, creations. Deux Cranes strives to celebrate the flavors and aesthetics in Japanese and French culinary traditions. The incredible quality of the chocolate we source from Valrhona, in Tain L’Hermitage, France, provides the perfect canvas for our creations. Utilizing these couvetures, we stone-grind and blend Japanese flavors such as kinako (roasted soy powder), goma (black sesame), and hōjicha (roasted Japanese green tea) into luscious chocolate bars and bonbons. Our unique signature flavors include Matcha Chocolate with Yuzu and Milk Chocolate with Ginger, Sesame and Buckwheat. We also offer a rotating selection of seasonal offerings. In addition to geometrically designed chocolate bars, the Deux Cranes product portfolio includes a variety of meticulously constructed bonbons, shortbreads, and caramels with flavors such as miso, umé, shiso, saké and Japanese shichimi togarashi pepper. Since 2018, we have intentionally created products with remarkable attention to the detail of every flavor and design element. We strive to elevate the chocolate and confectionery tradition in the US by combining our rich heritage as Japanese women to present our new interpretation of this historic industry. |

All of our products are harvested and processed on our beautiful family farm in Granville, New York. We believe protecting our maple trees and mountain trails is our most important mission. We work our woodland trails gently and bring as little impact to our dense maple forest as possible. We have a steady stream of customers that return their glass packaging and can get it refilled rather than buying plastic jug syrup every time they purchase. Fat Kid Cookie Co was born out of a desire to make life a little brighter. Stephanie Wiley, founder, has always had a passion for baking. She finds solace in the process and relishes in the joy her treats bring to friends and family. Everyone has an inner “fat kid” who feels satisfied from the perfect treat. Close friends and family couldn’t resist Stephanie’s now-famous recipe, and that’s how Fat Kid Cookie Co earned its name. Stephanie’s cookies have something for everyone. An amazing mix of sweet, spicy, and savory flavors are tasted in every bite. They are made by hand in small batches with simple ingredients. Fat Kid Cookie Co became a reality after the tragic death of Stephanie’s son in 2020. Tommy loved life. He preferred to spend his time outdoors, snowboarding, hiking and enjoying nature. He was a loyal friend and had the gift of making people feel seen, and unfortunately he had the disease of addiction. He wanted nothing more than to be sober, went to rehab and achieved just that. He amazingly caught up on all his schoolwork and graduated from high school on time, with his classmates. A week after graduation, Tommy used again and died of fentanyl poisoning. With the isolation from COVID, Tommy didn’t get a chance to live a sober life. Tommy did not want to die and while we do not believe he knew he was taking fentanyl, the hard truth is that one pill can kill. Launching Fat Kid Cookie Company was a way for Stephanie to move forward in her grief and her life, because cookies don't have to be serious! |
