Chardonnay- og Tempranillo-druer høstes i Spanias La Mancha-region, en av Europas eldste og største vinregioner. 2. Druer transporteres til vingården hvor de gjennomgår en prosess kalt 'Whole Cluster Press' kjent for å lage en mindre snerpende vin. 3. Druejuicen dekanteres deretter over i rustfrie ståltanker hvor de gjennomgår naturlig gjæring. Dette fortsetter til vinen når en delikat balanse. 4. Vinen vakuumdestilleres deretter ved under 25°C, slik at alkoholen fjernes uten å skade de delikate smakene og aromaene. Denne prosessen gjør det mulig for ALT. å bevare vinens karakteristiske smak, syre og munnfølelse uten kompromisser. 5. We ferment our peppers using traditional methods before we cook them with a few simple, high quality ingredients.
