The plan was to stay at the 250-year-old farmhouse that had been in Dave’s family for generations. Dave would work at the family butcher shop while Sarah started farming vegetables on land. One small adjustment: the couple missed all the diverse, super flavourful food options within walking distance of their old place in Toronto. So Dave began mixing his own spice blends to bring those meals to life, and Sarah decided they should sell them, along with their homemade jams, hot sauce and now-famous caramels, at the local farmer’s market. They loved being immersed in market life, making connections with the folks who grew their food, while cooking and serving meals. It deepened Sarah and Dave’s respect and appreciation for where food comes from and how much fun it can be to share it with others. This experience is what propelled them to build Big Cove Foods into what it is today: not just a line of delicious products, but a desire to connect and find community through food. That short stay in the county became a decade of building a life and a business. Sarah and Dave put down roots, and are growing a family at the same farmhouse where it all began. My journey with fungi first began in 2011 brewing mushroom tea and reconnecting to nature in the Canadian forests. It was in this season that I knew mushrooms would be with me for the rest of my life. They became and still are instrumental in my healing journey, and I know they can be for yours, too. For many years I struggled with digestive issues and immune dysregulation. Mentally, I was anxious and in a constant cycle of stress and brain fog—in retrospect I was existing in a general state of disconnection. After failed attempts at feeling better via traditional western medicine, my world shifted as I adopted mind-body practices, changed my diet and began taking mushrooms functionally. I created Rainbo to spread mushrooms to the masses and get people healthier and more deeply connected to nature. Mushrooms have shown me that whole-person healing is possible—that balance between all parts of ourselves and our social and natural environments is within grasp. The great metaphor of what mushrooms represent in nature is both my—and Rainbo’s—raison d’être: resilience, cooperation, and the unfathomable magnitude of nature’s intelligence and interconnectedness. Chocolate | Drew and I have always savoured chocolate, but we came to making it in a roundabout way. From Afghanistan to Zimbabwe, we’ve spent our careers working with farmers in developing countries which was just about the best job in the world. We learned much, helped a bit, and gained a huge respect and affection for people who make food, from grower to artisan. Life was a tad spartan, but it was considerably livened up by occasional indulgences of chocolate. When it was time to leave Kabul, it just seemed natural that we’d pursue chocolate making as it lets us connect with farmers, while learning how to craft something we love. We started out casually; a private hobby really. Friends wanted our bars and we experimented more. From there, chocolate became a passion. Soon enough, some insanely talented people joined us, considerably raising our game in the process. Together we’ve become crazily obsessed with making the best possible chocolate we can. There’s so much to learn in chocolate; get the right beans – do the right thing – and the flavours unlocked are incredible. Rush it, and it can be a disaster!
