Fermented Foods The Fermentary is the culmination of a life-long passion of Sharon Flynn, author of Ferment for Good and Wild Drinks. Since 2014, the Fermentary has been primarily a manufacturer of award-winning sauerkraut and kimchi, supplying Australia's best restaurants and shops. Craving face-to-face connection with customers, friends and students as the world was slowly opening up following the pandemic, Sharon, with her daughters, opened up a space in Fitzroy North called Pickwick House. It has taken on a life of its own - a space to teach, create, and share Sharon's favourite ferments from around the world, and more. We ferment in small-batches, naturally culturing food and drinks, slowly and with minimal intervention.
