THE FIRST PIZZA CERTIFIED ORGANIC IN AUSTRALIA! Our humble beginnings began with our very first Farro spelt pizzeria restaurant in Thornbury. Our goal was to simply share the power of using spelt flour and organic ingredients and encourage more of our community to make conscious food choices. Fast forward to today, we are proud to say that we now have multiple organic spelt pizzeria restaurants across Melbourne – and counting! Our mission is to inspire people near, far and wide, to live a healthy & happy life through conscious food choices that are still yummy, and everyone will love! We use spelt flour because it's not only delicious but also nutritious. Spelt is an ancient grain that's easier to digest and packed with more protein and fiber than regular wheat, giving our pizzas and pastas a wholesome flavor without compromising on health. Organic mozzarella cheese offers superior taste and quality. Free from synthetic additives and produced with care, our organic mozzarella melts perfectly, adding a rich, creamy flavor to our pizzas. |

The Fermentary is the culmination of a life-long passion of Sharon Flynn, author of Ferment for Good and Wild Drinks. Since 2014, the Fermentary has been primarily a manufacturer of award-winning sauerkraut and kimchi, supplying Australia's best restaurants and shops. Craving face-to-face connection with customers, friends and students as the world was slowly opening up following the pandemic, Sharon, with her daughters, opened up a space in Fitzroy North called Pickwick House. It has taken on a life of its own - a space to teach, create, and share Sharon's favourite ferments from around the world, and more. We ferment in small-batches, naturally culturing food and drinks, slowly and with minimal intervention. Our focus has always been sourcing simple, good ingredients and letting the slow ferment - making time and care/love very important ingredients that are, unfortunately, in short supply in our modern food industry. |
