ALBA | Authentic tequila comes from the heart. Protected by razor-sharp spikes and Mexico’s desert heat, each blue agave piña (heart) grows for at least seven years before it is ready for harvest. Brave jimadors wield ancient knowledge and sharp tools to dig up the precious piñas. These heavy hearts bake in stone ovens for three days to release their liquid gold. Many more suns, stars and moons pass while nature transforms the juice into nectar. Finally, dedicated tequileros distil the nectar twice, infusing the spirit with soul until it becomes that most precious elixir: tequila. Our tequila is sourced 1500m above sea level, in the small town of Magdalena in the highland region of Jalisco, Mexico. This mountainous wonderland is the perfect setting for blue agave to thrive, with a coastal Mediterranean climate laden with red clay, mineral rich soil and high elevations. You might have heard the word “terroir” thrown around, usually by wine snobs trying to flex, but terroir actually applies to anything derived from a plant. Simply put, terroir (pronounced “teuh-waa”), describes the influence that the combination of climate, soil and terrain have on the characteristics of the crop. In this case, the high altitude of the Los Altos region (~6,000 – 8,000ft) means the climate is perfect for agave growth and being exposed to intense weather while growing on mountainsides actually produces a more robust agave with higher sugar levels, resulting in a smoother, slightly sweeter tequila. The reddish clay soils also create the perfect environment for agave to flourish and causes herbal and fruity notes, which is typical to tequilas of this region. Once the agave has been harvested, they are transported to the distillery where the entire process takes place and the final tequila is produced.
